Witch Huts will occasionally spawn naturally in swamps, but can you create your own? In a way, you can. Unfortunately you will have to manually recreate the Witch Hut that spawns in swamps and cannot use magic to convert any Villager buildings.

No. If you transform a blacksmith Villager for example, he will be transformed for good.
