As the sugarcane grows to reach the observers, a pulse is sent to the pistons which breaks the sugarcane. The drops are collected by a hopper in a minecart, traveling underneath the sugarcane.



The design is very simple. As you can see, the observers are connected with redstone which sends the pulse down onto the cobblestone blocks. Because an adjacent block is powered the pistons will break the sugarcane. You can also replicate this design with bamboo.
