Mooshrooms are a variant of cows that spawn exclusively in the rare mushroom biomes. They are a hybrid of Cows and mushrooms. These are very hard to come by considering the requirements for them to spawn.

Mooshroom spawn only in the mushroom biomes making them one of the rarest mobs in Minecraft, they have a 1-in-1024 chance of spawning when two mooshrooms are bred. They require a minimum light level of 9 and will spawn on top of mycelium blocks, usually in herds of up to 8 at a time. They cannot spawn in any other biome.
There are two variants of mooshrooms but only one can spawn naturally. The red mooshroom is the variant that can spawn in a favorable environment. On the other hand, brown mooshrooms come into being when a red mooshroom is stuck by lightning making it rarer than its counterpart. Brown Mooshrooms can never spawn naturally.

Mooshrooms and cows have similar behavior: walking around slowly and without any objectives mooing as they go along. They stay away from dangers such as cliffs, lava, etc. but enjoy themselves in the water bobbing up and down and just having a fun time. Also, like regular cows, they will follow a player holding wheat in their hands.
Mooshrooms aren't of much help considering how rare and hard to find them is. Along with the rarity factor breeding them is also very hard as the chances of a baby mooshroom spawning are 1/1024 which is incredibly low. Shearing them provides you with mushrooms that correlate to the type of mooshroom you encounter.
Milking them is a good redeeming factor as you can get milk from them and mushroom soup. To get milk you just need to use an empty bucket, for soup a bowl is required. With the help of some flowers, you can get different effects from the soup.

Whenever a mooshroom is killed it will drop 1-3 pieces of beef, 0-2 pieces of leather, and between 1 - 3 experience points. Successfully breeding mooshrooms drop between 1-7 experience points. Killing baby mooshrooms is pointless as they don't drop anything just like other baby animals.
Mooshrooms are bred similarly to how cows are, with some wheat. Breeding two red mooshrooms has a 1/1024 chance of a brown mooshroom baby spawning and vice versa.
When breeding red and brown mooshrooms there is ½ chance of a red mooshroom baby and ½ for a brown one as well.
Also just like other baby animals the calf’s growth can be accelerated by feeding them wheat, this applies a reduction of 10% to the total time required for the baby to reach maturity.
Mooshrooms are something you shouldn’t go out of your way to look for as they are so difficult to find. If you luckily manage to cross paths with one make sure to use it for soup. Breeding them is also very helpful as you can get regular cows if you shear them. All in all, they feel like a collector’s item with one or two exclusive benefits.
