Open the "Options" menu, choose "Video Settings," and then scroll down to "Daylight Cycle" to extend the days in Minecraft. This is set to "Default" by default, giving you the typical 20-minute workdays. For days spanning 40 or 60 minutes, alter this to "Longer" or "Longest."
